Benito Molina – La Manzanilla, Silvestre

benitomolinaA specialist in fish and seafood, Benito settled in Ensenada, Baja California ten years ago.  There he founded La Manzanilla restaurant and also the Silvestre restaurant in Valle de Guadalupe, along with the talented chep Solange Muris.  Benito Lolina was recently named “pioneer of the Baja Mediterranean cuisine” by the Gormet USA magazine.  Before opening his own restaurants, he worked in several restaurants in Mexico City, in Polanco, Condesa and Coyoacan.  He is a critic of the fusion cusine and a great defender of national products.
